this is my idea of a random dinner
when my husband is out for the night
and i'm not over at my parent's house begging them to feed me.
i just pulled the stuff out of the fridge that i had on hand.
fast and really good.
ingredients
1 spaghetti squash
blue cheese crumbles
green onion - chopped
pecans - chopped
salt and pepper
-cut the spaghetti squash in half and scoop out the seed portion of the squash. this is just like cleaning out your pumpkin at Halloween.
-microwave the halves (i did mine face up) for 10-12 mins or until the squash is soft *be careful the quash is super hot at this point!
-use a kitchen towel to hold the squash and rake a fork across the squash to get the spaghetti like strands to come out.
-then top with whatever goodness you have in your fridge/pantry and enjoy.
to be honest this was my first time making spaghetti squash
and i loved it.
we are making spaghetti (squash) and meat sauce later this week
and i am pretty excited about it.

i have an opinion about everything!
living in yellow inspired me today!
truth be told she inspires me a lot. her blog is awesome.
lala lists had originally inspired her, therefore lala lists inspired me too.
do you love that i am using their blog titles as their names?
fun, right?
in blog world they would be two of my best friends.
go read their opinions and you will quickly know why.
soo following along in great leaders paths... here's what i think too!
1. it's okay to have cereal for dinner. the sugary the better.
2. if you type 30 wpm or less you should never ever ever highlight it on your resume.
3. straws should always be striped or polka dot. only cute colors allowed!
4. it's totally okay as an adult to still need your mom.
5. only programming country music radio stations in your car is a great idea.
6. cutting over last minute at your exit on an interstate to avoid sitting in traffic is rude. don't do it.
7. and slow drivers should always avoid the fast lane. always.
8. tv shows should not be able to take months and sometimes years between seasons.
9. every vehicle should come with NAV and this should not be considered an upgrade.
10. we should be able to pay someone to come fold and put away the laundry after each load.
11. men: you should always hold the door open for ladies. ALWAYS.
12 all: you should always hold the door open if someone is right behind you as you are entering anywhere.
13. the olympics should be held every year.
14. women's pants should come in half sizes too.
15. starbucks should deliver.
16. the house should clean itself daily.
17. new bloggers should get a few follows automatically as positive reinforcement.
18. you should be able to eat low carb without giving up french fries, pasta, rice, and corn.
19. flights anywhere should be way cheaper than they are currently.
20. gas anywhere should be way cheaper than it is currently.
21. adoption should be quick and painless for good people that just want to love and nurture a child.
22. burgers should be served at every single restaurant simply because they are my favorite.

23. it is never okay to be rude to someone for no reason. ever.
24. positive attitudes should be mandatory.
25. it should be beautiful out when you have plans and should be rainy when you want to stay in bed all day.
26. fruit never belongs in dessert, ever. choc, whipped cream, caramel, nuts, etc. need only apply.
27. chicken should come with all the gross stuff already cut off.
28. my dishwasher should be getting my dishes a lot cleaner than they are coming out these days. ugh!
29. it's okay for your pups to sleep in the bed with you despite what anyone else has to say.
30. it's awesome to love color and use a lot of it when designing your blog.

OMG...

logan and i usually have long days at work
so when we get home we need recipes that are simple and fast for dinner.
this is one of our favorite work week dinners.
i originally saw it on the rachel ray show a couple years ago and i made it from memory
but here is the recipe complete with a sauce (that looks delicious)
that we haven't tried yet.
these bundles have blue cheese, pecans, and scallions on the inside
oh and clearly they are wrapped in bacon. *best part.
i'm sure you could put just about anything on the inside and it would be awesome.
we keep saying we are going to change up the ingredients
and try something new
but we are so obsessed with this recipe that we just don't have the heart to switch it up.
yes, those are toothpicks holding the bacon goodness on the chicken.
maybe i should have taken them out before the pics?
or maybe not because i was just trying to snap pictures quickly so we could eat.
we usually serve rice or another starchy side with this meal
but i'm trying to eat low carb these days so we oppted for a little brocc
and a low carb dessert instead of the extra side.
more on dessert later this week.
now, go make these!

today is my friday
WOOHOO!
two long weekends in a row. O.M.G!
every year my mom and I play hooky from work one friday
and hit up our favorite festival.
the yellow daisy festival is any crafter's (or non crafter's) dream.
there are booths and booths of arts and crafts that we just drown ourselves in.
we go to find great craft ideas for things we can make at home
and every year we manage to pack the car full with those things we really can'tor don't want to make at home.
they have all the favorite festival foods and live music playing all weekend.
it's a tradition. it's our tradition.
it also doesn't hurt that mom and i are besties and we actually like to hang out together on the regular.
i'll let you know what we find.

we are hoarders!
okay not really but we are obsessed with bath and body works soaps
and tend to keep a few extras on hand at all times.
these soaps are in all of our bathrooms and our kitchen.
we tend to stick to our favorites
but we always throw in one or two that we haven't tried.
just to make sure we aren't missing anything great.
we love coconut lime verbina and eucalyptus mint
even though from the pics it looks like anything in the blue-green family will do.
i always stock up during an awesome sale with an email coupon in hand too.
go get some a bunch so you can be a hoarder too!

MIA with a sick puppy
we've been MIA...
because our little pup riley hasn't been feeling very well
and he needed us.
it turns out he had pancreatitis.
but after a couple days in the puppy hospital
he is home with us and feeling so much better.
he is almost back to 100%.
now we just need to fatten him up a bit
since he was on an all liquid iv diet for 3-4 days.
i was so sad when the vet told me that riley would need to stay over a few days.
the house was so quiet without him in it.
riley is a very barky dog and we actually missed him talking to us while he was gone.
the vet was great and got him back to us quicker than we expected
and so far our little brown cow is doing really great.
needless to say... we have been spoiling our little man rotten since he came home
and bailey has wasted no time letting his brother know the house wasn't the same without him.

falling in love with fall... early!
i am usually a full on summer girl
but this year... in this heat
i am SO ready for fall!
wow, i can't believe i just said that.
my pinning habit is making it really
easy to look forward to the cooler weather
and the orange and brown tones that take over the world.
i love anything pumpkin, everything apple,
and the overall warmth that generally comes
with the cooler temperatures.
please hurry fall.
i am so ready for all of this!
oh, and college football too.
go georgia bulldogs!
